Egg Scramble with Dandelion Greens, Ramps and Bacon

I found a patch of giant dandelions behind my workplace yesterday so I picked some, with the intention of experimenting with various ways to use the plant. I perused a few recipes and came up with this one for breakfast this morning.

Fry 2 strips of bacon, remove all but 1 tsp grease. Lightly sauté 2 diced ramps and 4 large chopped dandelion leaves. Add a sprinkling of salt and pepper to taste. Chop the cooked bacon and add to pan, then pour 2 scrambled eggs into pan. Stir until cooked to desired consistency.

I ate mine with some toasted homemade caraway rye bread smeared with a little butter and orange marmalade. Yum!
