Spicy sausage wild rice soup

I had a pound of hot Jimmy Dean sausage in the fridge that I had planned to make wild rice pie with, but my son said he would prefer some wild rice soup. So, I adjusted my plans to accommodate his wishes. (I still plan to make that pie soon!)

The results were fantastic, with a deliciously layered savory broth, nutty rice and perfectly cooked veggies. Since I had bacon grease leftover from breakfast I started by sautéing the carrots in the grease, adding the celery and onions after the carrots started caramelizing and letting them cook awhile before adding the veggies to the rest of the soup. I browned the sausage in the soup pot, then added chicken broth, brought it to a boil and added uncooked wild rice. I turned the heat down and let it simmer until the rice was cooked (10-15 minutes) then added the vegetables, more chicken broth and half and half. Delicious!

Here is the ingredients list:

  • 2 tbsp bacon grease
  • 6 large carrots, diced
  • 4 celery ribs, diced
  • 1 large yellow onion, diced
  • 1 lb Jimmy Dean hot sausage
  • 6 cups chicken broth
  • 1 cup uncooked wild rice
  • 2 cups half and half
  • Salt, pepper and minced garlic (season as you go)
