There are a lot of ways to cook a chicken, but I think this is the best way for amazing flavor and juicy tenderness.
Start with a cut up chicken and a hot grill with the coals covering one half of the grill. Season the chicken pieces with salt and pepper, then place on grill skin side down over the hot coals. Turn chicken over after a few minutes and continue to cook for a few more minutes until chicken pieces are browned and starting to crisp.
While chicken is browning, place your cast iron dutch oven on the cooler side of the grill and put in a 1/2 cup of water and a 1/2 stick or 4 Tbsp olive oil. Place chicken pieces, skin side up, into the dutch oven with breasts on bottom. Cover and then place grill cover on. Cook for 20 minutes. Test for doneness using thermometer.
Delicious, with fall-off-the-bone tenderness, with the beginnings of an amazing gravy in the bottom of the pot.
