Blueberry sourdough pancakes

Sourdough is not just for bread, you can make biscuits and pancakes and many other things using the starter. This weekend I decided to make blueberry pancakes. The process is pretty easy; just take out your starter the night before, then in the morning mix in flour, milk, eggs, salt, baking powder, and sugar. Let the batter rest on the counter until it’s nice and bubbly and then make your pancakes! I like to put the blueberries on the hot griddle first and then cover them with the batter. Save what you don’t use for the next day, the batter will be even more tender and flavorful in subsequent days.

Basic pancake recipe:

  • 1 cup sourdough starter
  • 2 cups flour
  • 1/4 cup sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 2 eggs
